Granola from Nikki via Marcia

Yet another recipe from Nikki by way of her Mother-in-Law, Marcia.

Granola:
(all amounts are flexible depending on your tastes, size of pan/bowl)
8-10 cups oatmeal, regular uncooked
1 cup sunflower seeds
1 cup soy flour
3/4 - 1 cup unsweetened coconut
1 cup almonds, coarsely chopped
1 1/2 cup honey
1/3 cup veg. oil
hot water, as needed


--Combine all dry ingredients in lg. bowl.  
--Mix together honey, oil & enough hot water to make 2 cups(or a little more).
--Add liquid to dry & mix til all is moistened.
--Spread in lg baking pan (mine is usually about 1 1/2" thick layer of granola in pan).
--Bake 325 degrees.  Stir every 1/2 hr.  (Oven temp can be increased, if you are watching it, so it won't burn  - or it can be lower, if you can't watch it well).  
--It's done when it looks like it's done. (Not too scientific).  If some of it is slightly burned or too dark, don't worry, it'll blend in w the lighter parts.
